If you love Mince Pies at Christmas, these Mince Pie Blondies are a must try for the festive season. Chewy Blondies dotted with sticky mincemeat pockets and creamy white choc chips. Our Walker’s festive Blondies will be sure to wow your guests. An easy bake recipe for all the family.
Ingredients
115g unsalted butter, melted and cooled
213g packed brown sugar
1 eggs & 1 egg yolk , room temperature
1 tablespoon vanilla extract
1/4 teaspoon baking powder
1/2 teaspoon salt
160g plain flour
100g white chocolate chips
Method
Preheat the oven to 190°c and line a 8x8″ baking tin with greaseproof paper.
Roughly chop the Mince Pies into bite sized chunks and set aside.
In a large bowl whisk together the melted butter and brown sugar. Add the egg, egg yolk, vanilla and mix together well.
In another large bowl sift together the baking powder, salt, and flour. Add the wet ingredients to the dry and mix together, until just mixed. Mix in the white chocolate chips. Do not over mix.
Spread the Blondie mixture into the lined pan, spreading into an even layer. Top the Blondie mix with the Mince Pie chunks.
Bake for 20-25 minutes or until the Blondies are golden brown and have risen. The middle may still be undercooked, but they will continue to cook as they cool out of the oven.
Once the Blondies are cool, cut into 9 squares and enjoy!
